Most of the time, when it comes to quick breads and muffins, I just can’t be bothered with a recipe. Is that normal? Is anybody else out there just winging it?
We had a bunch of bananas that were a little too mushy to eat, so I figured: why not? Into a bowl I creamed some vegan butter and sugar, added in vanilla and butter-flavor extract, bananas, flour, and a mixture of baking powder/baking soda. I found some hazelnuts in the pantry so I mixed those in, too.
They came out perfect… a little crunchy on the outside and super moist and fluffy on the inside. Even if they weren’t perfect, I would enjoy them so much more knowing that I hadn’t bothered to measure everything out. Sometimes it’s just nice to feel that not everything has to be so perfect all the time.
I had some freelance work to proofread tonight, and Brian is doing yet another online coding course, so I figured we could use a little comforting. Muffins are the best for that, I think!
